- 800 g Beef broth

Caramelizing Onions
- Peel, cut in two, and add 600 g of onion in the food processor bowl.
- Mix chop: 5sec / 0°C / Speed 5.
- Add 30 g of olive oil, 30 g of butter in the food processor bowl.
- Mix manual: 15:00min / 120°C / Speed 1.
- Add 20 g of flour t55, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 3:00min / 100°C / Speed 2.
Soup
- Add 150 g of white wine, 800 g of beef broth in the food processor bowl.
- Mix manual: 20:00min / 100°C / Speed 2.
Croutons and Gratination
- Preheat the oven at 180°C.
- Slice the baguettes into thick rounds.
- Place the content of the preparation content on a baking tray.
- Cook in the oven at 180°C.
- Bake in the preheated oven until lightly toasted.
- Grate Gruyere.
- Ladle the soup into oven-safe bowls.
- Top each bowl with toasted baguette slices.
- Distribute 100 g of gruyere on a bowl.
