  • 80 g Granulated sugar
  • 10 g Salt
  • 130 g Butter
  • 250 g Milk
  • 2 Eggs

Steps

Dough

  1. Add 500 g of flour t55, 20 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 0°C / Speed 3.
  3. Add 80 g of granulated sugar, 10 g of salt, 80 g of butter, 250 g of milk, 2 eggs in the food processor bowl.
  4. Mix knead: 5:00min / 0°C / Speed 1.
  5. Add 200 g of dark chocolate chip in the food processor bowl.
  6. Mix manual: 30sec / 0°C / Speed 2 in inverse.
  7. Transfer the content of the food processor bowl on a workplan.
  8. Shape the dough into a ball.
  9. Cover the dough with a clean cloth.
  10. Setaside the dough in a bowl during 1h .

Shaping and Filling

  1. Preheat the oven at 180°C.
  2. Gently deflate the dough.
  3. Roll the dough into a large rectangle (approximately 40×50 cm).
  4. Add 50 g of brown sugar in a mixing bowl.
  5. Add 50 g of butter in the mixing bowl.
  6. Mix the Brown Sugar and softened Butter until well combined in a bowl.
  7. Spread the Brown Sugar mixture evenly over the dough rectangle.
  8. Roll the dough tightly into a log, starting from one long side.
  9. Cut the log into 7 equal slices (about 5-6 cm each).
  10. Place the slices, cut-side up, in a greased round baking pan, arranging them side-by-side.

Baking

  1. Cover the pan with a clean cloth.
  2. Setaside the preparation content in an oven during 30min.
  3. Cook in the oven at 180°C.
  4. Check for golden brown color before removing from oven.
  5. Let the brioche cool slightly before serving.
  6. Serve Warm.
