  • 10 g Fresh baker's yeast
  • 250 g Flour t55
  • 5 g Salt
  • 100 g Chorizo

Dough

  1. Add 150 g of water, 10 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 250 g of flour t55, 5 g of salt in the food processor bowl.
  4. Mix knead: 6:00min / 0°C / Speed 1.
  5. Setaside the preparation content in a bowl cover with towel during 1h .

Shaping and Filling

  1. Preheat the oven at 220°C.
  2. Transfer the content of the bowl on a workplan.
  3. Deflate the dough.
  4. Cut into small pieces, and add 100 g of chorizo in some dough.
  5. Incorporate Chorizo to the dough.
  6. Shape the dough into a round loaf.
  7. Make a few cuts on the surface of the loaf.

Baking

  1. Transfer the content of the workplan on a baking tray to be covered in baking paper before.
  2. Cook in the oven at 220°C.
  3. Let cool slightly before slicing and serving.
  4. Serve Warm.
