- 20 g Orange juice
- 100 g Country bread
- 50 g Fresh goat cheese

Orange Mousse
- Add 200 g of red pepper in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Add 100 g of philadelphia in the food processor bowl.
- Mix manual: 15sec / 0°C / Speed 4.
- Add 2 g of gelatin, 20 g of orange juice in the food processor bowl.
- Mix manual: 3:00min / 50°C / Speed 2.
- Transfer the content of the food processor bowl in the ramekin.
- Setaside the preparation content in a fridge during 2h .
Goat Cheese Base
- Sliced, and add 100 g of country bread on a cutting board.
- Spread 50 g of fresh goat cheese on a plate.
Assembling the Dish
- Unmould the content of the ramekin on the plate.
- Place one orange mousse half-sphere on top of each Goat Cheese base.
- Serve Cold.
