This particular version, featuring chestnuts and hazelnuts, brings a nutty twist to the classic almond filling, making it an irresistible treat. Legend has it that the person who finds the hidden fève in their slice becomes king (or queen) for the day, so be sure to serve it with a side of fun and friendly competition. Originating from the medieval French tradition, this galette is a perfect blend of flaky puff pastry and a creamy, nutty filling that will have you proclaiming 'Vive la Galette!' after the first bite. Don’t forget to have your crown ready; you never know who will be crowned the monarch of the dessert table!

- 80 g Butter
- 70 g Granulated sugar
- 80 g Hazelnut
- 1 Egg
- 120 g Chestnut cream
Steps
- Preheat the oven at 180°C.
- Cut into small pieces, and add 80 g of butter in the food processor bowl.
- Add 70 g of granulated sugar in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 4. Scrape the sides of the bowl with the spatula
- Add 80 g of hazelnut in the food processor bowl.
- Mix chop: 10sec / 0°C / Speed 6.
- Add 1 egg in the food processor bowl.
- Add 120 g of chestnut cream in a bowl.
- Mix manual: 1:00min / 0°C / Speed 3.
- Setaside the preparation content.
- Add 500 g homemade puff pastry in a workplan.
- Divide the puff pastry into two. Roll out two rectangles measuring approximately 20 × 15 cm each.
- Place a rectangle of dough on a baking tray lined with parchment paper, then brush the edges with egg yolk using a brush.
- Spread the chestnut and hazelnut cream over the rectangle of dough, leaving 1 cm free around the edges. Push a bean into the cream.
- Place the second rectangle of dough on top of the cream, seal the edges, and then brush the top with egg yolk using a brush.
- Decorate the surface with the tip of a knife and sprinkle with crushed whole hazelnuts.
- Setaside the preparation content in a freezer during 30min.
- Cook in the oven with rotating heat at 200°C during 37min.
- Let it cool down before serving it.
