  • 300 g Granulated sugar
  • 220 g Flour t55
  • 4 Eggs
  • 160 g Butter
  • 8 g Baking powder
  • 100 g Lemon juice

Steps

Lemon Zest and Sugar

  1. Add 2 lemon zests, 220 g of granulated sugar in the food processor bowl.
  2. Mix manual: 10sec / 0°C / Speed 10.

Cake Batter

  1. Add 220 g of flour t55, 4 eggs, 160 g of butter, 8 g of baking powder, 50 g of lemon juice in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 4.
  3. Transfer the content of the food processor bowl in a cake mold.
  4. Butter and flour the cake mold.
  5. Preheat the oven at 180°C.
  6. Cook in the oven at 180°C during 35min.
  7. Check doneness with a toothpick.

Lemon Cream

  1. Add 50 g of lemon juice in a saucepan.
  2. Add 80 g of granulated sugar in the saucepan.
  3. Cook in the saucepan.
  4. Cook over medium heat until sugar is dissolved and thickened.
  5. Setaside the preparation content let cool.

Final Touches

  1. Once the cake has cooled, slice and serve with the Lemon Cream.
