  2. Add 50 g of granulated sugar in the food processor bowl.
  3. Mix manual: 20sec / 0°C / Speed 5.
  4. Transfer the content of the food processor bowl by using the spatula in a strainer.
  5. Strain the mixture through a fine-mesh sieve to remove the seeds and obtain a smooth puree.
  6. Setaside the preparation content on a container.

Kiwi Mousse

  1. Rinse the food processor bowl.
  2. Add 200 g of whipping cream in the food processor bowl.
  3. Mix manual: 2:00min / 0°C / Speed 3.
  4. Transfer the content of the preparation content in a saucepan.
  5. Add 2 g of agar in the saucepan.
  6. Cook in the saucepan.
  7. Transfer the content of the saucepan by using the spatula in a mixing bowl.
  8. Transfer the content of the food processor bowl by using the spatula in the mixing bowl.

Final Assembly

  1. Cut into dices, and add 100 g of kiwi in a glass.
  2. Transfer the content of the mixing bowl in the glass.
  3. Setaside the preparation content in a fridge during 2h .
