- 320 g Water
- 10 g Fresh baker's yeast
- 500 g Flour t55
- 10 g Salt
- 100 g Black olive
- 20 g Olive oil
Steps
Dough Preparation
- Add 320 g of water, 10 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 500 g of flour t55, 10 g of salt in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Add 100 g of black olive, 20 g of olive oil in the food processor bowl.
- Mix knead: 1:00min / 0°C / Speed 1.
First Proofing
- Transfer the content of the food processor bowl in a bowl.
- Lightly oil the bowl.
- Setaside the dough in the bowl cover with towel during 1h .
Shaping and Second Proofing
- Preheat the oven at 220°C.
- Line a baking sheet with baking paper.
- Transfer the content of the bowl on a workplan.
- Gently deflate the dough.
- Divide it into 8 equal portions.
- Shape each portion into a round bun.
- Place the content of the workplan on a baking tray.
- Setaside the dough on the baking tray cover with towel during 30min.
Baking

- Cook in the oven at 220°C.
