  • 125 g Salted butter
  • 1 Egg
  • 2 Pinch(es) Salt
  • 600 g Endive
  • 1 Pinch(es) Pepper
  • 100 g Gruyere
  • 200 g Fresh liquid cream

Steps

Shortcrust Pastry

  1. Add 250 g of flour t55, 125 g of salted butter, 1 egg, 1 pinch(es) of salt in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 4.
  3. Transfer the content of the food processor bowl on a workplan.
  4. Wash the food processor bowl.
  5. Form a ball with the dough and then flatten it.
  6. Wrap the dough in cling film.
  7. Setaside the dough in a fridge during 30min.
  8. Preheat the oven at 200°C.
  9. Roll out the dough.
  10. Place it in a tart pan.
  11. Cover the dough with baking paper.
  12. Fill with dried beans.
  13. Cook in the oven at 200°C during 15min.
  14. Remove the baking paper and beans.
  15. Cook in the oven at 200°C during 5min.

Endive Filling

  1. Cut in pieces, and add 600 g of endive in the food processor bowl.
  2. Mix manual: 15:00min / 120°C / Speed 1 in inverse.
  3. Add 1 pinch(es) of salt, 1 pinch(es) of pepper, 100 g of gruyere, 200 g of fresh liquid cream in the food processor bowl.
  4. Mix manual: 10sec / 0°C / Speed 4.

Baking

  1. Transfer the content of the food processor bowl over the dough.
  2. Cook in the oven at 200°C during 20min.
  3. Let cool slightly before serving.
  4. Serve Warm.
