Ingredients
- 250 g Flour t55
- 125 g Salted butter
- 1 Egg
- 2 Pinch(es) Salt
- 600 g Endive
- 1 Pinch(es) Pepper
- 100 g Gruyere
- 200 g Fresh liquid cream
Steps
Shortcrust Pastry
- Add 250 g of flour t55, 125 g of salted butter, 1 egg, 1 pinch(es) of salt in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a workplan.
- Wash the food processor bowl.
- Form a ball with the dough and then flatten it.
- Wrap the dough in cling film.
- Setaside the dough in a fridge during 30min.
- Preheat the oven at 200°C.
- Roll out the dough.
- Place it in a tart pan.
- Cover the dough with baking paper.
- Fill with dried beans.
- Cook in the oven at 200°C during 15min.
- Remove the baking paper and beans.
- Cook in the oven at 200°C during 5min.
Endive Filling
- Cut in pieces, and add 600 g of endive in the food processor bowl.
- Mix manual: 15:00min / 120°C / Speed 1 in inverse.
- Add 1 pinch(es) of salt, 1 pinch(es) of pepper, 100 g of gruyere, 200 g of fresh liquid cream in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
Baking
- Transfer the content of the food processor bowl over the dough.
- Cook in the oven at 200°C during 20min.
- Let cool slightly before serving.
- Serve Warm.
