200 g Whipping cream

2 Eyes in sugar paste

Steps

Cookie Dough

Add 75 g of oatmeal flake in the food processor bowl.
Mix manual: 10sec / 0°C / Speed 10.
Add 150 g of flour t55, 2 g of baking soda, 1 g of salt, 85 g of salted butter in the food processor bowl.
Mix manual: 10sec / 0°C / Speed 4.
Add 75 g of granulated sugar, 1 egg, 1 teaspoon(s) of vanilla extract in the food processor bowl.
Mix manual: 20sec / 0°C / Speed 4.
Transfer the content of the food processor bowl on a cling film warp in cling wrap.
Setaside the dough during 30min.
Preheat the oven at 175°C.
Roll out the dough to about 5mm thickness.
Cut out circles using a cookie cutter.
Place the cookies on a baking sheet lined with baking paper.
Cook in the oven at 175°C during 10min.
Let the cookies cool completely on a wire rack.

Chocolate Cream Filling

Add 200 g of dark chocolate in the food processor bowl.
Mix manual: 10sec / 0°C / Speed 8.
Add 200 g of whipping cream in the food processor bowl.
Mix manual: 3:00min / 50°C / Speed 2.
Mix manual: 20sec / 0°C / Speed 4.
Setaside the preparation content let cool.

Decoration

Wash the food processor bowl.
Add 100 g of white chocolate in the food processor bowl.
Mix manual: 3:00min / 50°C / Speed 2.
Transfer the content of the food processor bowl in a piping bag.
Cut a very small corner off the piping bag.
Pipe small dots of white chocolate around the edge of half of the cookies to create the teeth.
Setaside the preparation content on a plate let cool.
Spread the chocolate cream filling generously on the flat side of the remaining cookies.
Place a decorated cookie on top of each filled cookie to create a sandwich.
Place 2 eyes in sugar paste on the plate.
Serve Immediately.
