  • 4 White sugar doughs
  • 500 g Milk
  • 3 Eggs
  • 80 g Granulated sugar
  • 1 Teaspoon(s) Vanilla extract
  • 40 g Flour t55

  1. Add 250 g of puff pastry on a workplan.
  2. Roll out the puff pastry thinly.
  3. Cut out four circles using a pastry cutter or knife.
  4. Place 4 white sugar doughs in the ramekin.
  5. Preheat the oven at 180°C.
  6. Cook in the oven at 180°C during 15min.
  7. Setaside the dough let cool.

Custard Cream

  1. Add 500 g of milk, 3 eggs, 80 g of granulated sugar, 1 teaspoon(s) of vanilla extract, 40 g of flour t55 in the food processor bowl.
  2. Mix manual: 8:00min / 90°C / Speed 4.
  3. Setaside the preparation content let cool during 10min.

Assembly

  1. Transfer the content of the preparation content in the ramekin.
  2. Cook in the oven at 180°C during 10min.
  3. Setaside the preparation content let cool.
  4. Serve Cold.
