  • 150 g Butter
  • 80 g Icing sugar
  • 1 Eggplant
  • 1 Teaspoon(s) Vanilla flavor
  • 1 Pinch(es) Salt
  • 100 g Hazelnut

Steps

Dough

  1. Add 250 g of flour t55 in the food processor bowl.
  2. Cut into cubes, and add 150 g of butter in the food processor bowl.
  3. Add 80 g of icing sugar in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 6.
  5. Add 1 eggplant, 1 teaspoon(s) of vanilla flavor, 1 pinch(es) of salt in the food processor bowl.
  6. Mix manual: 20sec / 0°C / Speed 5.
  7. Transfer the content of the food processor bowl on a workplan.
  8. Wrap in plastic wrap.
  9. Setaside the dough in a fridge during 30min.

Shaping & Baking

  1. Preheat the oven at 180°C.
  2. Line a baking sheet with parchment paper.
  3. Roll out the dough on a lightly floured surface to about 5mm thick.
  4. Using a cookie cutter, cut out round shapes.
  5. Place the content of the workplan on a baking tray.
  6. Place 100 g of hazelnut at the baking tray.
  7. Cook in the oven at 180°C during 12min.

Cooling

  1. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  2. Store in an airtight container.
