  • 1000 g Water
  • 10 g Coarse salt
  • 250 g Polenta
  • 100 g Gruyere
  • 50 g Butter
  • 50 g Fresh parsley
  • 20 g Fresh chive
  • 200 g Fresh liquid cream
  • 1 Pinch(es) Salt
  • 1 Pinch(es) Pepper

Steps

Polenta Preparation

  1. Add 1000 g of water, 10 g of coarse salt in the food processor bowl.
  2. Mix manual: 10:00min / 100°C / Speed 1.
  3. Mix manual: 0sec / 0°C / Speed 3.
  4. Add 250 g of polenta through a plate.
  5. Mix manual: 30:00min / 90°C / Speed 3.
  6. Add 100 g of gruyere, 50 g of butter in the food processor bowl.
  7. Mix manual: 10sec / 0°C / Speed 3.
  8. Transfer the content of the food processor bowl on a baking tray to be covered in baking paper before.
  9. Spread evenly to a thickness of about 1 cm.
  10. Setaside the preparation content let cool.

Herb Cream Sauce

  1. Rinse, chop, and add 50 g of fresh parsley in a mixing bowl.
  2. Rinse, chop, and add 20 g of fresh chive in the mixing bowl.
  3. Add 200 g of fresh liquid cream, 1 pinch(es) of salt adjust according to the tastes, 1 pinch(es) of pepper adjust according to the tastes in the mixing bowl.
  4. Mix all ingredients together.

Polenta Sticks Finishing

  1. Cut the solidified polenta into rectangular sticks.
  2. Preheat the oven at 200°C.
  3. Cook on the oven at 200°C during 15min.
  4. Bake for 15-20 minutes, or until golden brown.

Serving

  1. Serve Hot.
  2. Serve the polenta sticks with the herb cream sauce on the side for dipping.
