Ingredients
- 150 g Milk
- 20 g Fresh baker's yeast
- 500 g Flour t55
- 80 g Granulated sugar
- 100 g Salted butter
- 2 Eggs
- 1 g Orange zest
- 1 g Lemon zest
- 100 g Pearl sugar
Steps
Dough
- Add 150 g of milk, 20 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 500 g of flour t55, 80 g of granulated sugar, 100 g of salted butter, 2 eggs, 1 g of orange zest, 1 g of lemon zest in the food processor bowl.
- Mix knead: 6:00min / 0°C / Speed 2.
- Transfer the content of the food processor bowl in a mixing bowl.
- Setaside the dough in a bowl cover with towel during 1h .
Cooking
- Preheat the oven at 180°C.
- Shape the dough into a round, flat cake on a baking sheet lined with baking paper.
- Setaside the dough on a baking tray during 30min.
- Brush the top of the brioche with a beaten egg.
- Sprinkle 100 g of pearl sugar over the dough.
- Cook in the oven at 180°C.
Serving
- Let the brioche cool slightly before serving.
- Serve Warm.
