Dough

  1. Add 150 g of milk, 20 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 500 g of flour t55, 80 g of granulated sugar, 100 g of salted butter, 2 eggs, 1 g of orange zest, 1 g of lemon zest in the food processor bowl.
  4. Mix knead: 6:00min / 0°C / Speed 2.
  5. Transfer the content of the food processor bowl in a mixing bowl.
  6. Setaside the dough in a bowl cover with towel during 1h .

Cooking

  1. Preheat the oven at 180°C.
  2. Shape the dough into a round, flat cake on a baking sheet lined with baking paper.
  3. Setaside the dough on a baking tray during 30min.
  4. Brush the top of the brioche with a beaten egg.
  5. Sprinkle 100 g of pearl sugar over the dough.
  6. Cook in the oven at 180°C.

Serving

  1. Let the brioche cool slightly before serving.
