Ingredients
- 250 g Split pea
- 750 g Water
- 5 g Salt
- 200 g Green pea
- 15 g Olive oil
- 5 g Fresh coriander
Steps
Split Pea Puree
- Rinse, and add 250 g of split pea in a strainer.
- Add 750 g of water, 5 g of salt in the food processor bowl.
- Mix manual: 30:00min / 100°C / Speed 1.
- Check if the split peas are soft. If not, cook for another 10 minutes at 100°C at speed 1.
- Mix manual: 30sec / 0°C / Speed 5.
- Mix manual: 30sec / 0°C / Speed 8. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
Green Pea Topping
- Boil in the saucepan filled with water at 100°C.
- Add 200 g of green pea in a saucepan.
- Alternatively, steam the green peas until tender.
- Drain the content of the saucepan in the strainer.
- Serve Hot.
- Add 15 g of olive oil on a plate.
- Add 5 g of fresh coriander on the plate.
- Spoon the split pea purée into bowls, drizzle with olive oil, sprinkle with the cooked green peas, and garnish with fresh coriander.
