Steps

Preparation

Peel, cut in pieces, and add 1000 g of potato in a bowl.

Drain well and pat dry with paper towels.

Add 60 g of butter in the food processor bowl.

Add 60 g of flour t55 in the food processor bowl.
Mix manual: 2:00min / 100°C / Speed 2.
Add 750 g of beef broth gradually, 15 g of worcestershire sauce, 5 g of thyme, 5 g of garlic powder, 1 salt adjust according to the tastes, 1 pepper adjust according to the tastes in the food processor bowl.
Mix manual: 8:00min / 90°C / Speed 3.
Move the preparation to a saucepan.
Setaside the preparation content in a saucepan.

Fries

Add 1 sunflower oil in a pot.
Cook in the oven at 160°C.
Add 1000 g of potato in the pot.
Cook in the oven at 160°C during 5min.
Remove and drain on paper towels.
Cook in the oven at 190°C.
Add 1000 g of potato in the pot.
Cook in the oven at 190°C during 2min.
Remove and drain on paper towels.

Assembly
