- 150 g Flour t55
- 75 g Butter
- 50 g Water
- 3 Eggs
- 200 g Whipping cream
- 1 Teaspoon(s) Salt
- 1 Pinch(es) Pepper
- 100 g Emmental
- 50 g Fresh spinach

Shortcrust Pastry Base
- Add 150 g of flour t55, 75 g of butter in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Add 50 g of water in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a workplan.
- Form the dough into a ball and flatten it slightly.
- Wrap the dough in cling film.
- Setaside the dough in a fridge during 30min.
- Wash the food processor bowl.
Assembling and Baking
- Preheat the oven at 180°C.
Shortcrust Pastry Base
- On a lightly floured surface, roll out the chilled dough.
- Use it to line a quiche dish. Ensure the dough covers the base and sides of the dish.
- Cook in the oven at 180°C during 15min.
Quiche Filling
- Add 3 eggs, 200 g of whipping cream, 1 teaspoon(s) of salt adjust according to the tastes, 1 pinch(es) of pepper adjust according to the tastes in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
- Add 100 g of emmental, 50 g of fresh spinach in the food processor bowl.
Assembling and Baking
- Transfer the content of the food processor bowl in a baking dish.
- Cook in the oven at 180°C during 30min.
- Bake for 30-35 minutes, or until the filling is set and lightly golden brown on top.
- Let the quiche cool slightly before serving.
- Serve Warm.
