Steps
Preparation
- Add 1500 g of beef chuck on a workplan.
- Add 1 g of salt on a plate.
- Add 1 g of pepper on the plate.
- Season the Beef Chuck with Salt and Pepper.
Roasting the Beef
- Add 2 onions in the food processor bowl.
- Peel, and add 2 carrots in the food processor bowl.
- Add 2 celery branches, 20 g of olive oil in the food processor bowl.
- Mix manual: 8:00min / 120°C / Speed 1.
- Add 1 beef chuck, 2 bay leaves, 500 g of beef broth, 1 g of salt, 1 g of pepper in the food processor bowl.
- Mix slow cook: 60:00min / 98°C / Speed 1.
- Move the Beef Chuck to a plate.
- Setaside the plate on the plate let cool.
Gravy Preparation
- Strain the cooking liquid from the Thermomix bowl into a separate container. Discard the solids.
- Wash the food processor bowl.
- Add 20 g of butter, 20 g of flour in the food processor bowl.
- Mix manual: 3:00min / 100°C / Speed 3.
- Gradually add the cooking liquid to the Thermomix bowl, stirring continuously.
- Mix manual: 10:00min / 100°C / Speed 4.
- Add 1 g of salt adjust according to the tastes, 1 g of pepper adjust according to the tastes in the food processor bowl.
- Adjust seasoning with Salt and Pepper if needed.
- Slice the Beef Chuck.
