  • 200 g Granulated sugar
  • 100 g Salted butter
  • 120 g Whipping cream
  • 2 Pinch(es) Flower of salt

Steps

Caramel

  1. Add 200 g of granulated sugar in the food processor bowl.
  2. Mix manual: 15:00min / 100°C / Speed 1.
  3. Cut in pieces, and add 100 g of salted butter in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 3.
  5. Add 120 g of whipping cream gradually in the food processor bowl.
  6. Mix manual: 30sec / 0°C / Speed 3.
  7. Mix manual: 25:00min / 100°C / Speed 2.
  8. Check the consistency; it should coat the spoon. If not, cook for a few more minutes.

Cooling

  1. Pour the content of the food processor bowl on a baking tray.
  2. Sprinkle 2 pinch(es) of flower of salt on a preparation content.
  3. Setaside the preparation content let cool.

Cutting

  1. Once cooled and firm, cut the caramel into cubes.
  2. Alternatively, break some of the caramel into irregular pieces for a varied texture.
