Bite into a slice of sunshine with this no-bake strawberry pie, where the classic flavors of summer meet the delightful crunch of speculoos! Originating from the heart of Belgian pastry culture, speculoos cookies lend a spicy, caramelized note to the crust, which is so easy to make you might just wonder why you ever baked a pie in the first place. This dessert is like a summer picnic in a pan, featuring a creamy mascarpone filling that dances with the fresh, juicy strawberries on top, making it the perfect treat for those warm days when you want to impress without breaking a sweat.
