100 g Orange blossom water
250 g Flour
100 g Semolina
1 g Saffron
1 g Baking powder
1000 g Sunflower oil

Steps

Syrup

Add 500 g of granulated sugar, 250 g of water, 30 g of lemon juice, 1 cinnamon stick in the food processor bowl.
Mix manual: 20:00min / 100°C / Speed 1.
Pour the content of the food processor bowl in a bowl.
Add 100 g of orange blossom water in the food processor bowl.
Mix manual: 10sec / 0°C / Speed 2.
Pour the content of the food processor bowl in the bowl let cool.

Zlabia Dough

Wash the food processor bowl.
Add 250 g of flour, 100 g of semolina, 1 g of saffron, 1 g of baking powder, 300 g of water in the food processor bowl.
Mix manual: 30sec / 0°C / Speed 4.
Transfer the content of the food processor bowl in a piping bag.
Setaside the dough during 1h .

Frying and Soaking

Add 1000 g of sunflower oil in a pan.
Pipe the batter into the hot oil in spiral or circular shapes.
Fry until golden brown and crispy on both sides, about 2-3 minutes per side, ensuring even color. Use a slotted spoon to flip the Zlabia.
Remove the content of the pan.
Let them soak in the syrup for about 2-3 minutes, ensuring they are well coated.
Remove the content of the plate on a strainer.
Transfer the content of the strainer on a plate.
Place them on a wire rack to drain excess syrup.
Serve Warm.
