- 400 g Clementine
- 150 g Ice cube
- 100 g Granulated sugar
Steps
Clementine Prep
- Add 400 g of clementine on a cutting board.
- Separate into segments
- Cut some Clementines segments into triangles for garnish.
- Setaside the preparation content at a fridge.
- Setaside the preparation content at a freezer during 2h .
Sorbet Base
- Add 150 g of ice cube, 100 g of granulated sugar in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 6.
- Add the frozen Clementines segments.
- Mix manual: 30sec / 0°C / Speed 8. Scrape the sides of the bowl with the spatula
- Use the spatula to assist until a smooth, sorbet-like consistency is achieved.
Serving
- Transfer the content of the food processor bowl in a glass.
- Garnish with Clementines triangles on a toothpick.
- Serve immediately with the remaining Clementines segments.
