Ingredients

  • 400 g Clementine
  • 150 g Ice cube
  • 100 g Granulated sugar

Steps

Clementine Prep

  1. Add 400 g of clementine on a cutting board.
  2. Separate into segments
  3. Cut some Clementines segments into triangles for garnish.
  4. Setaside the preparation content at a fridge.
  5. Setaside the preparation content at a freezer during 2h .

Sorbet Base

  1. Add 150 g of ice cube, 100 g of granulated sugar in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 6.
  3. Add the frozen Clementines segments.
  4. Mix manual: 30sec / 0°C / Speed 8. Scrape the sides of the bowl with the spatula
  5. Use the spatula to assist until a smooth, sorbet-like consistency is achieved.

Serving

  1. Transfer the content of the food processor bowl in a glass.
  2. Garnish with Clementines triangles on a toothpick.
  3. Serve immediately with the remaining Clementines segments.
