  • 550 g Flour t55
  • 75 g Granulated sugar
  • 7 g Salt
  • 7 g Dehydrated baker's yeast
  • 300 g Milk
  • 60 g Butter
  • 100 g Raisin
  • 1 Orange zest
  • 1 Lemon zest
  • 70 g Water
  • 50 g Apricot jam

Steps

Prepare the Dough

  1. Add 500 g of flour t55, 75 g of granulated sugar, 7 g of salt, 7 g of dehydrated baker's yeast in the food processor bowl.
  2. Mix manual: 5sec / 0°C / Speed 3.
  3. Add 300 g of milk, 60 g of butter in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 3.
  5. Add 100 g of raisin, 1 orange zest, 1 lemon zest in the food processor bowl.
  6. Mix knead: 2:00min / 0°C / Speed 3.
  7. Transfer the content of the food processor bowl in a mixing bowl.
  8. Setaside the dough in the mixing bowl cover with plastic wrap during 1h .
  9. Let rise in a warm place until doubled in size.

Buns Shaping

  1. Preheat the oven at 180°C.
  2. Punch down the dough.
  3. Divide it into 12 equal pieces.
  4. Shape each piece into a square bun.
  5. Place the content of the dough on a baking tray.
  6. Cover the buns.
  7. Setaside the dough on the baking tray during 30min.

Cross and Baking

  1. Add 50 g of flour t55, 50 g of water in the mixing bowl.
  2. Mix until you get a smooth paste.
  3. Transfer the content of the preparation content in a piping bag.
  4. Pipe a cross on top of each bun.
  5. Cook in the oven at 180°C.
  6. Bake for 20-25 minutes, or until golden brown.

Glaze

  1. Add 50 g of apricot jam, 20 g of water in the food processor bowl.
  2. Mix manual: 3:00min / 60°C / Speed 2.
  3. Transfer the content of the food processor bowl in a container.
  4. Brush the buns immediately with the Apricot Jam glaze.
  5. Let the buns cool slightly before serving.
  6. Serve Warm.
