  • 250 g Granulated sugar
  • 20 g Lemon juice
  • 1 Teaspoon(s) Vanilla extract
  • 10 g Dark rum

Steps

Prepare the Bananas

  1. Slice the bananas into 1/2-inch thick rounds.

Cook the Jam

  1. Add 500 g of banana, 250 g of granulated sugar, 20 g of lemon juice in the food processor bowl.
  2. Mix manual: 20:00min / 100°C / Speed 1.
  3. Add 1 teaspoon(s) of vanilla extract, 10 g of dark rum in the food processor bowl.
  4. Mix manual: 5:00min / 100°C / Speed 1.
  5. If not, cook for another 5 minutes at 100°C/speed 1, and check again.
  6. Mix manual: 10sec / 0°C / Speed 5.

Sterilize Jars

  1. Boil the oven filled with water at 100°C.

Finishing

  1. Pour the content of the food processor bowl in an airtight jar.
  2. Leave about 1/4 inch of headspace.
  3. Wipe the rims of the jars clean, place the lids on, and screw on the bands until fingertip tight.
  4. Boil the oven filled with water at 100°C during 10min.
  5. Let the jars cool completely on a towel-lined surface.
  6. Check the seals by pressing on the center of each lid. If it doesn't flex, the jar is sealed.
  7. Store in a cool, dark place.
  8. Setaside the preparation content.
