- 42 g Fresh baker's yeast
- 1 Tablespoon(s) Granulated sugar
- 90 g Granulated sugar
- 2 Eggs
- 220 g Butter
- 700 g Flour t45
- 1 Pinch(es) Salt
- 100 g Cristal sugar
Steps
- Add 200 g of milk, 42 g of fresh baker's yeast, 1 tablespoon(s) of granulated sugar in the food processor bowl.
- Setaside the preparation content during 10min.
- Add 90 g of granulated sugar, 2 eggs in the food processor bowl.
- Cut in pieces, and add 100 g of butter in the food processor bowl.
- Add 500 g of flour t45, 1 pinch(es) of salt in the food processor bowl.
- Mix knead: 2:00min / 0°C / Speed 2.
- Transfer the content of the preparation content in a salad bowl cover with towel.
- Let it rise for 30 minutes, until it has doubled in size.
- Wash the food processor bowl.
- Add 200 g of flour t45, 100 g of cristal sugar in the food processor bowl.
- Cut into dices, and add 120 g of butter in the food processor bowl.
- Mix manual: 5:00min / 0°C / Speed 3.
- Knead the risen dough again and roll it out on a baking sheet lined with parchment paper.
- Crumble the topping with your hands over the dough, cover it, and let it rest for another 20 minutes.
- Preheat the oven at 160°C.
- Cook in the oven with rotating heat at 160°C during 45min.
- Take the cake out of the oven and let it cool down.
- Cut the cake into slices and sprinkle them with powdered sugar.
