  • 90 g Granulated sugar
  • 2 Eggs
  • 220 g Butter
  • 700 g Flour t45
  • 1 Pinch(es) Salt
  • 100 g Cristal sugar

  1. Add 200 g of milk, 42 g of fresh baker's yeast, 1 tablespoon(s) of granulated sugar in the food processor bowl.
  2. Setaside the preparation content during 10min.
  3. Add 90 g of granulated sugar, 2 eggs in the food processor bowl.
  4. Cut in pieces, and add 100 g of butter in the food processor bowl.
  5. Add 500 g of flour t45, 1 pinch(es) of salt in the food processor bowl.
  6. Mix knead: 2:00min / 0°C / Speed 2.
  7. Transfer the content of the preparation content in a salad bowl cover with towel.
  8. Let it rise for 30 minutes, until it has doubled in size.
  9. Wash the food processor bowl.
  10. Add 200 g of flour t45, 100 g of cristal sugar in the food processor bowl.
  11. Cut into dices, and add 120 g of butter in the food processor bowl.
  12. Mix manual: 5:00min / 0°C / Speed 3.
  13. Knead the risen dough again and roll it out on a baking sheet lined with parchment paper.
