  • 90 g Granulated sugar
  • 1 Orange zest
  • 250 g Whole thick cream
  • 3 Eggs
  • 0.25 Teaspoon(s) Vanilla pod in powder form
  • 1 Pinch(es) Salt
  • 0.5 Teaspoon(s) Orange flavor
  • 250 g Mascarpone
  • 120 g Coffee
  • 20 g Orange juice
  • 200 g Spoon biscuit

Steps

  1. Grease a 30 cm loaf pan with oil and line it with plastic wrap.
  2. Place the whisk.
  3. Add 90 g of granulated sugar, 1 orange zest in the food processor bowl.
  4. Mix manual: 15sec / 0°C / Speed 10.
  5. Transfer the content of the preparation content in a container.
  6. Setaside the preparation content.
  7. Add 250 g of whole thick cream in the food processor bowl.
  8. Mix manual: 5:00min / 0°C / Speed 5. Scrape the sides of the bowl with the spatula
  9. Setaside the preparation content in a fridge.
  10. Add 2 eggs, 1 egg only white, ¼ teaspoon(s) of vanilla pod in powder form, 1 pinch(es) of salt, ½ teaspoon(s) of orange flavor in the food processor bowl.
  11. Mix manual: 5:00min / 50°C / Speed 4.
  12. Mix manual: 5:00min / 0°C / Speed 4.
  13. Remove the whisk.
  14. Add 250 g of mascarpone in the food processor bowl.
  15. Mix manual: 20sec / 0°C / Speed 4.
  16. Transfer the content of the preparation content in the container.
  17. Setaside the preparation content.
  18. Fold one third of the whipped cream into the mascarpone mixture, then gently fold in the remaining whipped cream using a spatula.
  19. Add 120 g of coffee in a mixing bowl.
  20. Add 20 g of orange juice in the mixing bowl.
  21. Mix the two ingredients thoroughly.
  22. Add 200 g of spoon biscuit in the container.
  23. Spread half of the biscuits at the bottom of the prepared cake pan and drizzle half of the coffee mixture over them. Then, spread half of the mascarpone mixture on top.
  24. Place the remaining cookies on top and drizzle with the leftover coffee mixture. Spread the rest of the mascarpone mixture on top and smooth it out.
  25. Cover and freeze the parfait for at least 6 hours.
  26. Take the parfait out of the freezer 15 minutes before serving. Slice the parfait, garnish with orange segments, and serve.
