- 4 Tablespoon(s) Raisin
- 4 Tablespoon(s) Maple syrup
- 750 g Apple
- 3 Tablespoon(s) Lemon juice
- 3 Teaspoon(s) Cinnamon powder
Steps
- Add 550 g perfect shortcrust pastry on a workplan.
- Wrap the dough in plastic wrap and place it in the refrigerator for 1 hour. Towards the end of the chilling time, prepare the apple filling.
- Add 4 tablespoon(s) of raisin in a mixing bowl.
- Add 4 tablespoon(s) of maple syrup in the mixing bowl.
- Combine the two ingredients and set aside.
- Peel, hollow out, and add 750 g of apple in the food processor bowl.
- Add 3 tablespoon(s) of lemon juice, 3 teaspoon(s) of cinnamon powder in the food processor bowl.
- Mix manual: 6sec / 0°C / Speed 4.
- Preheat the oven at 180°C.
- Cut the chilled dough in half. Roll out one half on a floured surface to a thickness of about 3 mm and place it on parchment paper.
- Place half of the apple filling lengthwise in the center of the dough, sprinkle with 1-2 tablespoons of sugar and optionally 1-2 tablespoons of rum-soaked raisins.
- Place one side of the puff pastry over the filling, brush with half of the egg white, and then lay the other side on top, pressing down gently.
- Fold the ends, press firmly, and place on a baking sheet lined with parchment paper. Repeat the same process with the second half of the dough and filling, and also place it on the baking sheet.
- Cook in the oven at 180°C during 35min to 40min.
- Let the apple snake cool down a bit, sprinkle with powdered sugar, cut into pieces, and serve warm.
