Ingredients

  • 500 g Potato
  • 1000 g Water
  • 3 Pinch(es) Salt
  • 110 g Olive oil
  • 1 Tablespoon(s) Paprika
  • 1 Tablespoon(s) Garlic powder
  • 5 g Fresh chive
  • 100 g Mayonnaise
  • 5 g Fresh parsley
  • 50 g Ketchup

Steps

Potato Chips

  1. Add 500 g of potato in a container.
  2. Slice the potatoes thinly using a mandoline or vegetable peeler for even thickness.
  3. Add 1000 g of water, 1 pinch(es) of salt in the food processor bowl.
  4. Mix manual: 10:00min / 0°C / Speed 1.
  5. Drain the content of the food processor bowl on a baking paper.
  6. Pat dry with paper towels.

Seasoning and Frying

  1. Divide the potato slices into three bowls.
  2. Add 50 g of olive oil in a bowl.
  3. Sprinkle 1 pinch(es) of salt with the bowl.
  4. Add 30 g of olive oil in the bowl.
  5. Sprinkle 1 tablespoon(s) of paprika, 1 tablespoon(s) of garlic powder with the bowl.
  6. Add 30 g of olive oil in the bowl.
  7. Chop, and sprinkle 5 g of fresh chive with the bowl.
  8. Heat Olive Oil in a deep fryer or large pot to 160°C.
  9. Fry the fryer with an oil base at 160°C.
  10. Fry the Potato slices in batches until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Creamy Herb Dip

  1. Add 100 g of mayonnaise in the food processor bowl.
  2. Chop, and add 5 g of fresh parsley in the food processor bowl.
  3. Add 1 pinch(es) of salt in the food processor bowl.
  4. Mix manual: 5sec / 0°C / Speed 3.
  5. Transfer the content of the food processor bowl in the bowl.
  6. Wash the food processor bowl.
  7. Serve Immediately.
  8. Add 50 g of ketchup beside the bowl.
