- 30 g Butter
- 100 g White wine
- 100 g Roquefort
- 100 g Whipping cream
- 1 Pinch(es) Pepper
- 1000 g Natural mussel
- 5 g Fresh dill

- Discard any mussels that do not close when tapped.
Roquefort Sauce
- Peel, chop, and add 50 g of shallot in the food processor bowl.
- Mix chop: 3sec / 0°C / Speed 5.
- Add 30 g of butter in the food processor bowl.
- Mix manual: 3:00min / 120°C / Speed 1.
- Add 100 g of white wine in the food processor bowl.
- Mix manual: 2:00min / 100°C / Speed 1. Filler cap open
- Add 100 g of roquefort, 100 g of whipping cream in the food processor bowl.
- Mix manual: 5:00min / 90°C / Speed 2.
- Add 1 pinch(es) of pepper adjust according to the tastes in the food processor bowl.
Final Preparation
- Cook in the oven without added oil at 100°C.
- Add 1000 g of natural mussel in a pot.
- Discard any mussels that do not open.
- Transfer the content of the pot in a service dish.
- Pour the content of the food processor bowl.
- Chop, and sprinkle 5 g of fresh dill on a plate.
- Serve Immediately.
