Ingredients
- 100 g Water
- 10 g Instant coffee
- 2 Sugar cubes
- 50 g Dark chocolate
- 200 g Whipping cream
- 3 Wafers with vanilla
Steps
Coffee Cream Base
- Add 100 g of water, 10 g of instant coffee in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
- Add 2 sugar cubes in the food processor bowl.
- Mix manual: 3:00min / 50°C / Speed 2.
- Mix manual: 5sec / 0°C / Speed 6.
- Transfer the content of the food processor bowl in a bowl let cool.
Chocolate Sauce
- Rinse the food processor bowl.
- Add 50 g of dark chocolate in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 8. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
- Mix manual: 3:00min / 50°C / Speed 2.
- Scrape down the sides of the bowl.
- Mix manual: 1:00min / 50°C / Speed 2.
- Transfer the content of the food processor bowl in the bowl let cool.
Whipped Cream
- Rinse the food processor bowl.
- Place the whisk.
- Add 200 g of whipping cream in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 3.
- Watch carefully until soft peaks form.
- Transfer the content of the food processor bowl in a piping bag.
Assembly
- In tall glasses, layer the coffee cream base.
- Drizzle chocolate sauce along the sides of the glass.
- Pipe or spoon whipped cream on top.
- Garnish with chocolate shavings.
- Add 3 wafers with vanilla on a preparation content.
- Serve Immediately.
