  • 10 g Instant coffee
  • 2 Sugar cubes
  • 50 g Dark chocolate
  • 200 g Whipping cream
  • 3 Wafers with vanilla

Steps

Coffee Cream Base

  1. Add 100 g of water, 10 g of instant coffee in the food processor bowl.
  2. Mix manual: 10sec / 0°C / Speed 4.
  3. Add 2 sugar cubes in the food processor bowl.
  4. Mix manual: 3:00min / 50°C / Speed 2.
  5. Mix manual: 5sec / 0°C / Speed 6.
  6. Transfer the content of the food processor bowl in a bowl let cool.

Chocolate Sauce

  1. Rinse the food processor bowl.
  2. Add 50 g of dark chocolate in the food processor bowl.
  3. Mix manual: 5sec / 0°C / Speed 8. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
  4. Mix manual: 3:00min / 50°C / Speed 2.
  5. Scrape down the sides of the bowl.
  6. Mix manual: 1:00min / 50°C / Speed 2.
  7. Transfer the content of the food processor bowl in the bowl let cool.

Whipped Cream

  1. Rinse the food processor bowl.
  2. Place the whisk.
  3. Add 200 g of whipping cream in the food processor bowl.
  4. Mix manual: 30sec / 0°C / Speed 3.
  5. Watch carefully until soft peaks form.
  6. Transfer the content of the food processor bowl in a piping bag.

Assembly

  1. In tall glasses, layer the coffee cream base.
  2. Drizzle chocolate sauce along the sides of the glass.
  3. Pipe or spoon whipped cream on top.
  4. Garnish with chocolate shavings.
  5. Add 3 wafers with vanilla on a preparation content.
  6. Serve Immediately.
