  • 500 g Raspberry
  • 80 g Granulated sugar
  • 250 g Whipping cream
  • 50 g Icing sugar

  • 5 g Mint

Raspberry Mousse

  1. Add 10 g of gelatin in a bowl.
  2. Add 50 g of water in the bowl.
  3. Hydrate Gelatin in cold Water
  4. Add 250 g of raspberry, 80 g of granulated sugar in the food processor bowl.
  5. Mix manual: 20sec / 0°C / Speed 8.
  6. Transfer the content of the food processor bowl in the bowl.
  7. Strain the raspberry puree through a sieve to remove the seeds
  8. Setaside the preparation content in the bowl.
  9. Wash the food processor bowl.
  10. Transfer the content of the bowl in the food processor bowl.
  11. Mix manual: 3:00min / 50°C / Speed 2.
  12. Add 10 g of gelatin in the food processor bowl.
  13. Mix manual: 10sec / 0°C / Speed 3.
  14. Transfer the content of the food processor bowl in the bowl let cool.
  15. Add 250 g of whipping cream in a mixing bowl.
  16. In a separate bowl, whip Whipping Cream until soft peaks form using a regular electric mixer or stand mixer
  17. Transfer the content of the mixing bowl in the bowl.
  18. Gently fold the whipped cream into the cooled raspberry mixture

Raspberry Coulis

  1. Add 200 g of raspberry, 50 g of icing sugar in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 8.
  3. Add 10 g of lemon juice in the food processor bowl.
  4. Mix manual: 5sec / 0°C / Speed 3.
  5. Transfer the content of the food processor bowl in the bowl.
  6. Strain the raspberry coulis through a sieve for a smoother sauce
  7. Setaside the preparation content in the bowl.

Final Assembly

  1. Remove the bavarois from the springform pan
  2. Pour the content of the bowl on the preparation content.
  3. Add 50 g of raspberry, 5 g of mint leaves only on the preparation content.
  4. Serve Cold.
