Steps
Brioche Dough
- Add 75 g of milk, 7 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 250 g of flour t55, 50 g of granulated sugar, 50 g of butter, 1 egg, 2 g of salt in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a mixing bowl cover with towel.
- Setaside the dough in a bowl during 1h 30.
Plum Filling
- Wash the food processor bowl.
- Cut in four, and add 500 g of plum in the food processor bowl.
- Add 50 g of granulated sugar, 20 g of lemon juice, 20 g of butter, 1 teaspoon(s) of cinnamon powder in the food processor bowl.
- Mix manual: 10:00min / 100°C / Speed 1.
- Transfer the content of the food processor bowl in the bowl.
- Setaside the preparation content in the bowl.
Streusel Topping
- Wash the food processor bowl.
- Add 100 g of flour t55, 50 g of granulated sugar, 50 g of butter, 50 g of powdered almond in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl in the bowl.
- Setaside the preparation content in the bowl.
Tart Assembly and Baking
- Preheat the oven at 180°C.
- Roll out the brioche dough on a lightly floured surface
- Place the dough in a 25 cm tart pan
