  • 50 g Cornflour (maïzena)

Steps

  1. Preheat a waffle maker.
  2. Peel, cut into cubes, and add 400 g of potato in the food processor bowl.
  3. Add 200 g of fresh liquid cream, 70 g of grated emmental, 50 g of cornflour (maïzena), 2 eggs, 1 pinch(es) of espelette pepper, 1 teaspoon(s) of salt, 1 pinch(es) of pepper in the food processor bowl.
  4. Mix manual: 10sec / 0°C / Speed 5.
  5. Pour a small ladle of the mixture into each compartment of the waffle maker.
  6. Cook for 10 to 12 minutes while monitoring the color.
  7. Remove the first waffles
  8. Repeat the process until the dough is fully used up.
  9. Serve the waffles hot with smoked salmon, a bit of cream, and chopped chives.
