Fig and Crumbly Cookies using a Thermomix

  • 200 g Soft dried fig
  • 125 g Butter
  • 250 g Flour t55
  • 75 g Granulated sugar
  • 1 Egg
  • 5 g Baking powder

Steps

Fig Filling

  1. Add 200 g of soft dried fig in the food processor bowl.
  2. Mix manual: 5sec / 0°C / Speed 5.
  3. Transfer the content of the food processor bowl in a bowl.

Cookie Dough

  1. Wash the food processor bowl.
  2. Add 125 g of butter, 250 g of flour t55, 75 g of granulated sugar, 1 egg, 5 g of baking powder in the food processor bowl.
  3. Mix manual: 20sec / 0°C / Speed 4.
  4. Transfer the content of the food processor bowl in the bowl.
  5. Divide the dough into two equal parts.
  6. Roll out each part of the dough into a rectangle on a lightly floured surface using a rolling pin.

Assembly and Baking

  1. Place one rectangle of dough on a baking sheet lined with baking_paper.
  2. Spread the content of the bowl on some dough.
  3. Spread the chopped Soft Dried Figs evenly over the dough.
  4. Cover with the second rectangle of dough.
  5. Gently press the top layer of dough to seal the filling.
  6. Preheat the oven at 180°C.
  7. Cook in the oven at 180°C during 15min.
  8. Bake for 15-20 minutes, or until golden brown.
  9. Let the cookies cool completely before cutting them into rectangular shapes.
  10. Serve Cold.
