- 2000 g Potato
- 20 g Salt
- 500 g Water
- 300 g Flour t55
- 500 g Tomato
Steps
Potato Prep
- Cut in four, and add 1000 g of potato in the food processor bowl.
- Add 10 g of salt, 500 g of water in the food processor bowl.
- Mix manual: 25:00min / 100°C / Speed 1.
- Drain the content of the food processor bowl in a strainer.
- Wash the food processor bowl.
Gnocchi Dough
- Mash finely the cooked potatoes.
- Add 1000 g of potato, 300 g of flour t55 adjust according to the tastes, 5 g of salt in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
Forming and Cooking Gnocchi
- Turn the dough out onto a lightly floured surface.
- Roll the dough into long ropes about 2cm thick.
- Cut the ropes into 2cm pieces to form gnocchi.
- Optionally, roll each gnocchi over a fork to create ridges.
- Boil water the oven filled with water at 100°C.
- Add Gnocchi and cook until they float to the surface, about 2-3 minutes.
- Remove the content of the cooking pot by using a spoon on a plate.
Tomato Sauce
- Cut in four, and add 500 g of tomato in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Mix manual: 10:00min / 100°C / Speed 2.
- Add 5 g of salt in the food processor bowl.
- Transfer the content of the food processor bowl in a bowl.
- Serve Hot.
- Serve Gnocchi with Tomato Sauce.
