- 120 g Granulated sugar
- 80 g Butter
- 600 g Apple
- 1 Puff pastry
- 5 Star anise
Steps
Caramelized Apples
- Add 120 g of granulated sugar, 80 g of butter in the food processor bowl.
- Mix manual: 15:00min / 0°C / Speed 1.
- Peel, core, and cut Apples into quarters.
- Add 600 g of apple in the food processor bowl.
- Mix manual: 20:00min / 0°C / Speed 1 in inverse.
Tatin
- Preheat the oven at 180°C.
- Roll out Puff Pastry to a size slightly larger than the robot bowl diameter.
- Transfer the content of the food processor bowl in a baking dish.
- Arrange the Apple pieces nicely.
- Place 1 puff pastry over the baking dish.
- Tuck edges down inside the dish.
- Cook in the oven at 180°C during 25min.
Inversion
- Remove from oven and let cool slightly.
- Place a serving plate over the baking dish and carefully invert the Tarte Tatin.
- Place 5 star anise on a preparation content.
- Serve Warm.
