- 280 g Flour t55
- 125 g Butter
- 100 g Icing sugar
- 1 Teaspoon(s) Salt
- 200 g Granulated sugar
- 4 Lemons
- 3 Eggs
- 1 Teaspoon(s) Baking powder
Steps
Shortbread Base
- Preheat oven to 180°C (350°F).
- Line a square baking pan (20×20 cm) with baking paper.
- Add 250 g of flour t55, 125 g of butter, 50 g of icing sugar, 1 teaspoon(s) of salt in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl in a baking tray.
- Press the mixture evenly into the prepared baking pan.
- Cook in the oven at 180°C.
- Setaside the preparation content on a workplan let cool.
Lemon Filling
- Wash the food processor bowl.
- Add 200 g of granulated sugar, 2 lemons in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 2 lemons, 3 eggs, 30 g of flour t55, 1 teaspoon(s) of baking powder in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl over the preparation content.
- Cook in the oven at 180°C.
- Setaside the preparation content in a fridge during 2h .
Final Touches
- Once chilled, lift the Lemon Squares out of the pan using the baking paper overhang.
- Cut into individual squares.
- Sprinkle 50 g of icing sugar adjust according to the tastes on the preparation content.
- Serve Cold.
