- 500 g Potato
- 800 g Water
- 2 Teaspoon(s) Salt
- 1 Teaspoon(s) Pepper
- 50 g Flour t55
- 2 Eggs
- 100 g Breadcrumb
- 500 g Olive oil
Steps
Potato Mixture
- Peel, cut in four, and add 500 g of potato in the food processor bowl.
- Add 800 g of water in the food processor bowl.
- Mix manual: 20:00min / 100°C / Speed 1.
- Drain the content of the food processor bowl in a strainer.
- Transfer the content of the strainer in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Add 2 teaspoon(s) of salt, 1 teaspoon(s) of pepper in the food processor bowl.
- Transfer the content of the food processor bowl in a service dish let cool.
Shaping and Coating
- Cut the Balls Of Mozarella into smaller, bite-sized cubes.
- Take a portion of the cooled mashed potatoes and flatten it in your palm. Place a Mozzarella cube in the center and form the potato around the cheese to create a ball.
- Place 50 g of flour t55 in a bowl.
- Place 2 eggs in a mixing bowl.
- Place 100 g of breadcrumb in a plate.
- Roll each potato ball in the Flour T55, then dip into the beaten Eggs, and finally coat thoroughly with Breadcrumbs.
Frying
- Add 500 g of olive oil in a frypan.
- Preheat the pan at 180°C.
- Carefully place the potato balls into the hot oil, being careful not to crowd the pan.
- Fry in the pan during 2min.
- Remove the content of the frypan by using a spoon on the plate.
- Place them on a plate lined with paper towels to drain excess oil.
- Serve Hot.
