- 250 g Ricotta
- 1 Egg
- 120 g Flour t55
- 2 Pinch(es) Salt
- 2 Cloves of garlic
- 30 g Olive oil
- 500 g Tomato puree
- 5 g Granulated sugar
- 1 Pinch(es) Pepper
- 10 g Fresh basil
Steps
Gnocchi Dough
- Add 250 g of ricotta, 1 egg, 120 g of flour t55, 1 pinch(es) of salt in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a workplan.
- Lightly flour the work surface.
- Roll the dough into long ropes, about 2 cm thick.
- Cut the ropes into 2 cm pieces.
- Gently roll each piece over a fork to create ridges.
Tomato Sauce
- Wash the food processor bowl.
- Add 2 cloves of garlic in the food processor bowl.
- Mix chop: 3sec / 0°C / Speed 7.
- Add 30 g of olive oil in the food processor bowl.
- Mix manual: 3:00min / 120°C / Speed 1.
- Add 500 g of tomato puree, 5 g of granulated sugar, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 15:00min / 100°C / Speed 2.
Final Preparation
- Bring a large pot of salted water to a boil (Not in the robot).
- Gently drop the gnocchi into the boiling water.
- Cook until they float to the surface, about 2-3 minutes.
- Transfer the content of the cooking pot by using the spatula in a service dish.
- Transfer the content of the food processor bowl on the service dish.
- Sprinkle 10 g of fresh basil on the service dish.
- Serve Hot.
