The process of boiling them before baking gives them that iconic chewy texture and glossy finish. - 150 g Water
- 8 g Granulated sugar
- 8 g Fresh baker's yeast
- 250 g Flour t55
- 5 g Salt
- 5 g Sunflower oil
- 10 g White sesame seed
- 10 g Sunflower seed
Steps
Dough Preparation
- Add 150 g of water, 8 g of granulated sugar, 8 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 1.
- Add 250 g of flour t55, 5 g of salt in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a bowl.
- Let rise, or until doubled in size.
Bagel Shaping and Cooking
- Preheat the oven at 220°C.
- Line a baking sheet with baking paper.
- Divide it into 2 equal pieces.
- Form a ring, pinching the ends together to seal.
- Boil water in the oven at 100°C.
- Cook for 1 minute per side.
- Remove the content of the pot on a baking tray.
- Brush 5 g of sunflower oil on a baguettes mould.
- Sprinkle 10 g of white sesame seed, 10 g of sunflower seed on the baguettes mould.
- Cook in the oven at 220°C during 20min.
- Bake for 20-25 minutes, or until golden brown.
- Let the bagels cool on a wire rack before slicing and serving.
- Serve Immediately.
