  • 10 g Fresh baker's yeast
  • 300 g Flour t55
  • 6 g Salt
  • 5 g Flour t45

Steps

Dough

  1. Add 200 g of water, 10 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 300 g of flour t55, 6 g of salt in the food processor bowl.
  4. Mix knead: 6:00min / 0°C / Speed 1.
  5. Transfer the content of the food processor bowl in a mixing bowl.
  6. Wash the food processor bowl.
  7. Form the dough into a ball.
  8. Lightly oil the mixing bowl.
  9. Setaside the dough in the mixing bowl cover with plastic wrap during 1h 30.

Shaping and Second Proof

  1. Gently deflate the dough.
  2. Shape it into an oval.
  3. Place the oval dough on baking paper.
  4. Sprinkle 5 g of flour t45 on the dough.
  5. Make regular diagonal slashes on the top of the dough with a sharp knife.
  6. Setaside the dough on a baking paper cover with towel during 30min.

Baking

  1. Preheat the oven at 240°C.
  2. Place a Dutch oven inside the oven during preheating.
  3. Carefully remove the hot Dutch oven from the oven.
  4. Using the baking paper as a sling, gently lower the dough into the Dutch oven.
  5. Cover with the Dutch oven lid
  6. Cook in the oven at 240°C during 30min.
  7. Remove the Dutch oven lid
  8. Cook in the oven at 240°C during 15min.
  9. Transfer the bread to a wire rack to cool completely before slicing.
