  • 2 Eggs

  • 4 g Salt

Steps

Brioche Dough

  1. Add 250 g of flour t55, 15 g of fresh baker's yeast, 60 g of milk, 2 eggs, 30 g of granulated sugar, 4 g of salt, 60 g of butter in the food processor bowl.
  2. Mix knead: 6:00min / 0°C / Speed 1.
  3. Transfer the content of the food processor bowl in a mixing bowl cover with towel.
  4. Setaside the dough during 1h .

Chocolate Chip Preparation

  1. Add 100 g of dark chocolate in the food processor bowl.
  2. Mix chop: 5sec / 0°C / Speed 5.
  3. Transfer the content of the food processor bowl in a bowl.

Assembly and Baking

  1. Preheat the oven at 180°C.
  2. Roll out the brioche dough into a large rectangle on a lightly floured surface.
  3. Spread the content of the bowl on the dough.
  4. Fold the dough in half and gently roll to flatten.
  5. Cut the dough into strips and braid them together.
  6. Place the content of the dough on a baking tray.
  7. Cook in the oven at 180°C during 20min.
