- 30 g Granulated sugar

- 60 g Butter

Dough
- Add 120 g of milk, 15 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 2 eggs, 300 g of flour t55, 30 g of granulated sugar, 5 g of salt in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Add 60 g of butter in the food processor bowl.
- Mix knead: 5:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a mixing bowl.
- Place the content of the cling film on some dough cover with plastic wrap.
- Setaside the dough in an oven during 1h .
Shaping and Second Rise
- Deflate the dough gently.
- Divide it into 8-10 equal pieces.
- Shape each piece into a ball.
- Place the content of the dough in the form a king crown.
- Place the content of the baking paper on the king crown.
- Place the balls side by side in the king crown lined with baking paper to form a brioche.
- Setaside the dough in the oven cover with towel during 35min.
Baking
- Preheat the oven at 180°C.
- Brush the top of the brioche with a beaten egg.
- Cook in the oven at 180°C during 25min.
- If the top is browning too quickly, cover it loosely with aluminum foil.
