  • 1 Lemon
  • 500 g Milk
  • 1 Cinnamon stick
  • 3 Eggs
  • 20 g Cornflour (maïzena)
  • 5 g Butter biscuit

  1. Add 50 g of granulated sugar, 1 lemon in the food processor bowl.
  2. Mix manual: 10sec / 0°C / Speed 10.
  3. Add 500 g of milk, 1 cinnamon stick in the food processor bowl.
  4. Mix manual: 8:00min / 90°C / Speed 2.
  5. Setaside the preparation content during 15min.

Catalan Cream

  1. Remove the content of the food processor bowl in a container.
  2. Wash the food processor bowl.
  3. Add 3 eggs, 20 g of cornflour (maïzena) in the food processor bowl.
  4. Transfer the content of the container in the food processor bowl.
  5. Mix manual: 10sec / 0°C / Speed 4.
  6. Mix manual: 12:00min / 90°C / Speed 3.
  7. Pour the content of the food processor bowl in the ramekin.
  8. Setaside the preparation content in a fridge let cool during 4h .

Caramelized Topping

  1. Sprinkle 10 g of granulated sugar on the preparation content.
  2. Caramelize the sugar with a kitchen torch until it's golden brown and crisp.
  3. Sprinkle 5 g of butter biscuit on the preparation content.
  4. Serve Immediately.
