Ingredients
- 60 g Granulated sugar
- 1 Lemon
- 500 g Milk
- 1 Cinnamon stick
- 3 Eggs
- 20 g Cornflour (maïzena)
- 5 g Butter biscuit
Steps
Infusion
- Add 50 g of granulated sugar, 1 lemon in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 500 g of milk, 1 cinnamon stick in the food processor bowl.
- Mix manual: 8:00min / 90°C / Speed 2.
- Setaside the preparation content during 15min.
Catalan Cream
- Remove the content of the food processor bowl in a container.
- Wash the food processor bowl.
- Add 3 eggs, 20 g of cornflour (maïzena) in the food processor bowl.
- Transfer the content of the container in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
- Mix manual: 12:00min / 90°C / Speed 3.
- Pour the content of the food processor bowl in the ramekin.
- Setaside the preparation content in a fridge let cool during 4h .
Caramelized Topping
- Sprinkle 10 g of granulated sugar on the preparation content.
- Caramelize the sugar with a kitchen torch until it's golden brown and crisp.
- Sprinkle 5 g of butter biscuit on the preparation content.
- Serve Immediately.
