- 500 g Water
- 100 g Onion
- 50 g Butter
- 40 g Flour t55
- 1 Pinch(es) Salt
- 1 Pinch(es) Pepper
- 1 Pinch(es) Nutmeg gourd
- 500 g Milk
- 100 g Grated gruyère
Steps
Cauliflower
- Cut the cauliflower into florets.
- Place 1 cauliflower in the cooking basket.
- Add 500 g of water in the food processor bowl.
- Place the cooking basket.
- Mix manual: 20:00min / 100°C / Speed 4.
- Remove the cooking basket.
- Transfer the content of the cooking basket at a preparation content.
- Setaside the preparation content beside a bowl.
- Empty the food processor bowl.
Cheese Sauce
- Rinse the food processor bowl.
- Cut in two, and add 100 g of onion in the food processor bowl.
- Mix chop: 5:00min / 0°C / Speed 5.
- Add 50 g of butter in the food processor bowl.
- Mix manual: 3:00min / 120°C / Speed 1.
- Add 40 g of flour t55, 1 pinch(es) of salt, 1 pinch(es) of pepper, 1 pinch(es) of nutmeg gourd in the food processor bowl.
- Mix manual: 3:00min / 100°C / Speed 2.
- Add 500 g of milk in the food processor bowl.
- Mix manual: 8:00min / 90°C / Speed 4.
Assembly
- Preheat the oven at 180°C.
- Transfer the content of the preparation content in a baking dish.
- Transfer the content of the food processor bowl with the baking dish.
- Sprinkle 100 g of grated gruyère on the preparation content.
- Cook in the oven at 180°C during 20min.
