Steps

Cinnamon paste

Add 250 g of milk, 25 g of fresh baker's yeast in the food processor bowl.
Mix manual: 2:00min / 37°C / Speed 2.
Add 500 g of flour, 80 g of granulated sugar, 1 egg, 1 teaspoon(s) of salt in the food processor bowl.
Cut in pieces, and add 120 g of butter in the food processor bowl.
Mix manual: 3:00min / 0°C / Speed 2.
Transfer the content of the preparation content in a container.
Setaside the preparation content in an oven during 1h .

Mounting

Add 100 g of butter, 100 g of brown sugar, 2 teaspoon(s) of cinnamon powder adjust according to the tastes in the food processor bowl.
Mix manual: 20sec / 0°C / Speed 4.
Transfer the content of the preparation content in the container.
Degas the dough and then dust the work surface with flour.
Roll out the dough into a rectangle shape, approximately 0.5 cm thick.
Spread the cinnamon mixture evenly over the entire surface of the rectangle.
Shape a sausage by rolling the dough onto itself and then cut it into slices.
Place your filled dough rolls on a silpat mat or parchment paper, making sure to space them a bit apart as the dough will rise further.
