- 135 g Whole wheat flour
- 15 g Powdered almond
- 40 g Icing sugar
- 1 Pinch(es) Salt
- 75 g Butter
- 1 Egg
- 50 g Dark chocolate
Steps
- Add 135 g of whole wheat flour, 15 g of powdered almond, 40 g of icing sugar, 1 pinch(es) of salt in the food processor bowl.
- Cut in pieces, and add 75 g of butter in the food processor bowl.
- Mix knead: 2:00min / 0°C / Speed 2.
- Add 1 egg in the food processor bowl.
- Mix knead: 1:00min / 0°C / Speed 2.
- Shape it into a ball and wrap it in plastic wrap.
- Setaside in a fridge during 1h .
- Wash the food processor bowl.
- Preheat the oven at 180°C.
- Divide the dough into twenty small balls and roll them into thin sausages on a floured work surface.
- Place them on a baking sheet lined with parchment paper and bake for 5-7 minutes.
- Cut in pieces, and add 50 g of dark chocolate in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 7.
- Mix manual: 4:00min / 37°C / Speed 3. Scrape the sides of the bowl with the spatula
- Mix manual: 1:00min / 37°C / Speed 3.
- Once the cookies are baked and cooled, dip them three-quarters into the melted chocolate.
- Rolling in the decorations: vermicelli, praline, crushed hazelnuts…
