Ingredients

  • 500 g Milk
  • 1 Vanilla bean
  • 4 Eggs
  • 200 g Granulated sugar
  • 1 Pinch(es) Salt
  • 30 g Water

Steps

Custard Base

  1. Add 500 g of milk, 1 vanilla bean in the food processor bowl.
  2. Mix manual: 8:00min / 90°C / Speed 2.
  3. Remove the content of the food processor bowl in a bowl.
  4. Scrape the Vanilla Bean seeds back into the milk and discard the pod
  5. Rinse the food processor bowl.
  6. Add 4 eggs only the yellow, 50 g of granulated sugar in the food processor bowl.
  7. Mix manual: 10sec / 0°C / Speed 4.
  8. Mix manual: 7:00min / 80°C / Speed 2.
  9. Transfer the content of the food processor bowl in an individual casserole.
  10. Setaside the preparation content let cool during 2h .

Meringue

  1. Place the whisk.
  2. Add 4 eggs only white, 1 pinch(es) of salt in the food processor bowl.
  3. Mix manual: 4:00min / 0°C / Speed 4.
  4. Add 50 g of granulated sugar gradually in the food processor bowl.
  5. Mix manual: 2:00min / 0°C / Speed 4.
  6. Remove the whisk.
  7. Shape the meringue into quenelles or irregular shapes using two spoons
  8. Boil water the saucepan over medium heat.
  9. Cook in the saucepan over medium heat during 1min and each side.
  10. Remove the content of the saucepan by using a spoon on a baking paper.

Caramel

  1. Rinse the food processor bowl.
  2. Add 100 g of granulated sugar, 30 g of water in the food processor bowl.
  3. Mix manual: 8:00min / 120°C / Speed 1. Filler cap open
  4. Pour the content of the food processor bowl.

Assembly

  1. Place the Meringue islands on top of the chilled Custard in the serving dishes
  2. Serve Immediately.
