Ingredients
- 200 g Water
- 5 g Granulated sugar
- 20 g Olive oil
- 5 g Salt
- 300 g Flour t55
- 100 g Gruyere
- 100 g Emmental
- 200 g Grated gruyère
Steps
Dough
- Add 200 g of water, 5 g of granulated sugar in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 20 g of olive oil, 5 g of salt, 300 g of flour t55 in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a mixing bowl.
- Lightly oil the mixing bowl.
- Setaside the dough in the mixing bowl cover with towel during 1h .
Cheese Topping and Assembly
- Preheat the oven at 220°C.
- Wash the food processor bowl.
- Add 100 g of gruyere, 100 g of emmental in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 6.
- Transfer the content of the food processor bowl in a bowl.
- Line a baking sheet with baking paper.
- Punch down the risen dough.
- Transfer the content of the mixing bowl on a baking tray.
- Gently stretch and press the dough into a round shape using your fingertips.
- Sprinkle 200 g of grated gruyère on the dough.
Baking
- Cook in the oven at 220°C during 20min.
- Bake for 20-25 minutes, or until the focaccia is golden brown and the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before slicing and serving.
- Serve Warm.
