Cheesy Focaccia using a Thermomix

  • 200 g Water
  • 5 g Granulated sugar
  • 20 g Olive oil
  • 5 g Salt
  • 300 g Flour t55
  • 100 g Gruyere
  • 100 g Emmental
  • 200 g Grated gruyère

Steps

Dough

  1. Add 200 g of water, 5 g of granulated sugar in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 20 g of olive oil, 5 g of salt, 300 g of flour t55 in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 1.
  5. Transfer the content of the food processor bowl in a mixing bowl.
  6. Lightly oil the mixing bowl.
  7. Setaside the dough in the mixing bowl cover with towel during 1h .

Cheese Topping and Assembly

  1. Preheat the oven at 220°C.
  2. Wash the food processor bowl.
  3. Add 100 g of gruyere, 100 g of emmental in the food processor bowl.
  4. Mix manual: 10sec / 0°C / Speed 6.
  5. Transfer the content of the food processor bowl in a bowl.
  6. Line a baking sheet with baking paper.
  7. Punch down the risen dough.
  8. Transfer the content of the mixing bowl on a baking tray.
  9. Gently stretch and press the dough into a round shape using your fingertips.
  10. Sprinkle 200 g of grated gruyère on the dough.

Baking

  1. Cook in the oven at 220°C during 20min.
  2. Bake for 20-25 minutes, or until the focaccia is golden brown and the cheese is melted and bubbly.
  3. Remove from the oven and let cool slightly before slicing and serving.
  4. Serve Warm.
